Ninja Sugar Cookies

Ingredients:
FOR COOKIES
Flour - 2 3/4 cups
Baking Soda - 1 tsp.
Baking Powder - 1/2 tsp.
Softened Butter - 1 cup
Sugar - 1 1/2 cups
Egg - 1
Vanilla Extract - 1 tsp.
FOR ICING
Powdered Sugar - 1 cup
Milk - (at least) 2 tsp (+)
Light Corn Syrup - 2 tsp.
Vanilla Extract - 1/4 tsp.

Directions:
For Cookies:

Stir together flour, baking soda, and baking powder. Set aside.

In another bowl, cream butter and sugar until smooth. Beat in egg and vanilla.

Gradually blend in dry ingredients.

Bake cookies
at 375° for 8-10 minutes.

For Icing:

Stir powdered sugar and milk until smooth. You may have to add more milk.

Beat in corn syrup and vanilla until smooth and glossy.

If too thick, add more corn syrup.

Add food coloring and stir.

Apply icing to cookies, decorate as you see fit, and enjoy.

Warning: Cookie recipe bakes 4 dozen cookies. To cut the recipe in half, do the math. Math has never been our forte so we just freeze our extra dough for later.

The Banana Suit

Ingredients: (Serves 1)

1 banana cut into rounds
1 cup skim milk
2 Tbl peanut butter
4 Tbl whey protein
1 Tbl honey
8 cubes of ice

Directions:
1. Blend until smooth.

Peachy Melon

Ingredients: (Serves 2)

2-3 cups watermelon (seeded)
1 cup low fat vanilla yogurt
1 cup strawberries
1/2 cup peaches

Directions:
1. Blend until smooth

The Frozen Berry Concoction

Ingredients: (Serves 2)

1 cup nonfat vanilla yogurt
1/4 cup apple juice
1 1/2 cups of a mixture of frozen peaches and raspberries
2 1/2 Tbl whey protein

Directions:

1. Puree yogurt with fruit juice in a blender until smooth.
2. Add fruit and continue to puree until smooth.

The PB & J

Ingredients: (Serves 1)

2 Tbl peanut butter
1 apple, core removed and coarsely chopped (not the core, the apple)
1/2 cup grapes
2 Tbl agave nectar
1 cup of water
8 ice cubes

Directions:
1. Put the water, apple, grapes, peanut butter, and agave nectar into a blender in that order.
2. Blend.
3. Add ice and blend again until smooth.

Avocado - Banana

Ingredients: (Serves 4)

1 avocado, halved, pitted, and peeled
1/2 cup fresh orange juice
2 bananas
1/4 cup plain yogurt
2 tsp sugar
1 Tbl freshly grated ginger
1 lime squeezed
1/2 tsp. salt

Directions:
1. Combine the avocado, orange juice, bananas, yogurt and sugar in a blender and puree until smooth.
2. Add the ginger and blend until well combined
3. Mix in the lime juice and salt.
4. Serve immediately.

Red Velvet Whoopie Pies (as submitted by Marianne Pickens)

Ingredients:

- 1 box Red Velvet cake mix
- 1/2 c. vegetable oil
- 2 Tbl. water
- 2 eggs
- 1 stick of butter (softened)
- 1 c. powdered sugar
- 2 c. marshmallow cream
- 1 tsp. vanilla

Directions:

For Cookies

    Combine cake mix, oil, water, and eggs. Mix well.

    Using 1 Tbl. scoop, drop onto parchment paper-covered         cookie sheet.

    Bake at 325 degrees for 12-13 minutes.

For Filling

    Beat together powdered sugar and butter.

    Beat in marshmallow cream and vanilla until smooth.

    Spoon onto bottom of cooled cookies then place another on     top to make a sandwich.

Store between layers of waxed paper in the fridge.

Easy Chocolate Chip Cookies

Note: No hand or stand mixer is needed for this recipe. Since the butter is melted, it can all be mixed by hand.

Ingredients:

  - 1 stick of butter (melted)
  - 3/4 cup granulated sugar
  - 3/4 cup brown (or light brown) sugar
  - 2 eggs
  - 2 Tbs vanilla
  - 1/2 tsp salt
  - 1 Tbs baking powder
  - 2 cups flour
  - 1 bag of chocolate chips

Directions:

Pre-heat oven to 375 degrees.

Mix together the melted butter and brown sugar and then mix in the granulated sugar.

Stir in the vanilla & eggs.

Add 1 cup of flour, salt, baking powder, and mix.

Then mix in the 2nd cup of flour and the choc. chips, and the batter is ready to bake.

Drop the dough (each cookie being about 2 Tbs of dough) onto cookie sheets and bake for about 8 - 9 minutes

Note: Baking time will vary depending on your oven. When the cookies start to brown around the edges they are done.

Take the cookie sheets out of the oven. The cookies will still be a little too soft on the bottom so let them cool 1 - 2 minutes on the sheet before moving them to a cooking rack or plate.

Tip: This dough can easily be made ahead of time. It freezes well (1 - 2 weeks in an air tight container) or up to 2 days in the fridge.

    Meet our Chef:

    Chef Anita Pepper has been dabbling in the kitchen all her life, but it wasn't until recently that she quit her job as a carpenter to forge a new career as Master Chef of Mooseville Café.

    Pepper's specialty dishes primarily focus on the southern and mid-western cooking styles, but have dashes of healthy goodness sprinkled in.
