The Mix

1 ½ oz Dry Gin
¼ tsp. Crème de Cacao
1 dash bitters
¼ of a lemon’s worth of juice

Directions: Shake well with cracked ice and strain into a 3 oz. cocktail glass.

The Mix

Juice of 1 Lime
1 tsp. Powdered Sugar
2 Dashes of Bitters
2 oz. Dry Gin
1 tbl Green Creme De Menthe
Carbonated water

Put sugar, bitters, gin, and lime juice in a 12 oz. Tom Collins glass. Add about 2 oz. of carbonated water. Fill the glass with shaved ice and stir thoroughly with a swizzle stick. Top off with carbonated water and add Creme De Menthe. Serve with a swizzle stick.

1 Ice Cube
Ginger Ale
2 oz. Dry Gin
Orange Juice

Add gin and ice cube to a highball glass and finish off with ginger ale. Add a splash of OJ and stir.

Toots's Bulldog HIghballs

Our Bulldog Highballs are made with Tanqueray gin, Thomas Kemper ginger ale, and freshly squeezed orange juice and are served with an orange slice.

Highball Trivia

Highball is the name for mixed drinks composed of an alcoholic base spirit and a larger proportion of a non-alcoholic mixer. There is great debate about who created the first highball. Some say it was created at the Adams House in Boston, but others say it originated in England. Either way it's popular in Japan.

2 oz. Gin (or vodka)
4 oz. Grapefruit Juice

Salt the rim of a highball glass and add mix over ice. Stir well.

Salty Dog Trivia

Salt is the only difference between a Salty Dog and a Greyhound. Although Vodka can be substituted, the Salty Dog is historically a gin drink.

Pimm's History

Pimm's is a brand of fruit cup first made in 1823 by James Pimm.

Pimm sold his gin-based tonic with its secret blend of herbs and liquors in a small tankard commonly known as the "No. 1 Cup" out of his oyster bar in the City of London. The drink was marketed to help with digestion.

Pimm's is most popular in England and has a highbrow image as it's one of the primary drinks served at events such as Wimbledon, polo matches, and the Henley Royal Regatta.

The term "It's Pimm's O'Clock!" was made famous by a 2003 ad campaign.

The Mix

1 part Pimm's No. 1 Liqueur
1/2 oz. (or so) of Gin
1 part Ginger Ale (or lemonade)
Sliced cucumbers (or fruit of choice)
Ice
Stir gently


Toots's Pimm's Cup

Toots's Pimm's Cup is made using Tanqueray gin and Thomas Kemper ginger ale. It's served in a low ball glass with crushed ice and cucumbers.

Variations of Pimm's Cups

A Pimm's Cup is mixed with lemonade or ginger ale and is accompanied by fresh fruits, commonly oranges, cherries, strawberries or cucumbers.

Mixing a Pimm's Cup with champagne instead of lemonade or ginger ale is called a Pimm's Royal Cup.

Some "unofficial" cups exist such as the absinthe-based No. 8.

The Rickey's History

Bartender George A. Williamson and Democratic lobbyist Col. Joe Rickey created "The Rickey" using bourbon in the 1880s at Shoomaker's Resort, a Washington D.C. bar originally located near the National Theatre but later moved to "Rum Row" just around the corner from "Newspaper Row."

"The Rickey" became a worldwide sensation a decade later when it was mixed with gin.

The Mix

1 1/2 oz. Gin
Lime juice (about 1/2 of a lime)
Soda water
Ice

Toots's Gin Rickey

Toots's Gin Rickey is made with Tanqueray and the juice of half a lime. It's served in an 8 oz. highball with lime pinwheels and three ice cubes.
